Sacher Torte

cake recipe that I adore and Luke Montersino could not let me down ...



Ingredients:


200 g soft butter 200 g melted chocolate
50 g cocoa mass (chocolate 99%)
300 g 125 g egg yolks


75 g sugar 25 g invert sugar (honey acacia)

225 g egg white
100 g sugar 80 g flour

0 200 g ground almonds

Frosting:

300 g dark chocolate 250 g cream 50 g glucose syrup


wet: 100 g sugar syrup

100 g water
25 g liquor
